Herb Roasted Lemon Chicken

With all the expenses we have, why add more buy buying a pre-cooked chicken from the local grocery store deli? With a little bit of pre-planning, you can come home to the wonderful smell of a herb-roasted chicken already cooked and waiting for you. All you will need is a cock-pot and few other ingredients to be able to come home to that yummy smell.

Ingredients

  • 1 chicken, about 4 pounds
  • Nonstick cooking spray
  • 3 lemons
  • 2 tablespoons olive oil
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon pepper
  • 1 tablespoon finely chopped fresh Italian parsley
  • 1/4 teaspoon leaf thyme

Instructions

  1. Remove the giblets from the chicken and reserve them for another use. Rinse the chicken and pat dry. Remove any excess fat from the chicken.
  2. Coat the crock with nonstick cooking spray for easy cleanup.
  3. Wash the lemons. Using a very sharp knife, make tiny slits in 2 of the lemons. This will allow the flavors of the lemon to escape while cooking. Cut all 3 of the lemons in half.
  4. Rub the skin of the chicken with the olive oil and sprinkle the salt and pepper on the outside of the bird.
  5. Put 4 of the lemon halves in the cavity of the chicken. Place the chicken in the slow cooker with the breast side down. Squeeze the juice of the remaining lemon halves over the chicken. Then sprinkle on the parsley and thyme.
  6. Cover and cook on low for 7 to 10 hours. Test for doneness by inserting a meat thermometer into the thickest part of the thigh without touching the bone. The thermometer should register 170 degrees.

Tip: The liquid from cooking this delightful dish can be used as a very lemony gravy. Better yet, it makes a great sauce for asparagus, broccoli, and green beans.
